national cupcake week.
Hello, hello, hello.

This week is National Cupcake Week .. & so I have thrown together a quick cupcake recipe (having only found out about it late this morning.)
Madeira Cake is a favourite in our house.. This is mostly what my mother makes her various wedding/christening cakes out of, & so there are scraps of Madeira cake loitering around the kitchen on a regular basis.

For the cupcakes:
- 175g butter
- 175g caster sugar
- 3 eggs
- 2-3 tbsp milk
- 250g self raising flour
- 1 tsp vanilla extract.
For the frosting:
- 140g butter
- 280g icing sugar
- dash of milk.
Method:
i. Cream the butter and sugar together. Then beat the eggs & milk in a separate bowl, before adding both mixtures together..
ii. Fold in the flour and vanilla extract, spoon into cupcake cases & bake in the oven at 180c for 25-30 minutes or until a skewer comes out clean.
For the topping:
- Beat the butter & icing sugar together until smooth. Add milk if more liquid is required in the mix, spoon over the cupcakes & add your own decoration.
