lentil dhal.
Saturday night is always curry night in our house.. Today I fancied a bit of a change from the usual & came up with a lentil dhal (or is it dahl? Anyone!?) Anyway, this was incredibly yummy, & also cheap & low fat. A winner all round!

Ingredients:
- 100g red lentils
- tin of chopped tomatoes (& a few cherry tomatoes if you have them)
- vegetable stock cube
- 2 small red onions
- 2 red chillis
- 1/2 tsp tumeric
- tsp garam masala (we didn’t have this, so I used bombay spices)
- large sweet potato peeled & cut into chunks
- handful of spinach
Method:
i. Fry off the onion & chilli in a pan with a tiny bit of oil.
ii. Add the spices & the potato & stir until well coated. Add the lentils, tin of tomatoes (& cherry, if using), & crumble the veggie stock cube into it. Add a little water if required.
iii. Leave to simmer for a good 20-30 mins, or until the sweet potato & lentils are thorougly cooked. Stir in the spinach & let it wilt. Enjoy.. Because this is a seriously good curry!
Also I couldn’t let this news story about Paul the German octopus pass without comment.. I love octopi, we touched on them briefly during my degree. I don’t actually know when the end of the world cup is, but it will be interesting to see if he manages to predict it correctly!
