chocolate & banana crumble loaf cake
Not going to lie.. I love crumble topping & would put it on everything if I could. This is a really moist, squidgy, chocolatey cake with a nice crunchy top. Definitely one to make again!

Cake Ingredients:
- 100g dark chocolate.
- 3 small bananas, mashed.
- 150g butter.
- 175g golden caster sugar.
- 175g self raising flour.
- 3 eggs.
- 1 tsp baking powder.
- 25g cocoa.
Crumble Top Ingredients:
- 25g butter
- 2+ tbsp of plain flour, enough to combine with the butter to make a crumbly consistency.
- 2 tbsp caster sugar.

Method:
i. Melt the chocolate & mash the banana.
ii. Butter two small loaf tins/one large loaf tin.
iii. Whisk together the butter & caster sugar, then beat in the eggs.
iv. Sift in the dry ingredients & mix well.
v. Add the chocolate & banana, mix again & then pour this into the tins.
vi. Rub together the topping ingredients to make a crumble style topping, adding more flour if needed.
vii. Sprinkle the top of the cake with the crumble & bake at 180c/365f/gas4 for around 45 mins (One large cake will probably need a bit longer..)

This is the first time I’ve used banana.. The cake came to work with me & I went home again with an empty box!
