bacon cheese & onion bread rolls!

There seems to be a vast amount of bacon in the fridge & I’ve been looking for an excuse to bake for a while, so there was only one thing for it.. Bread! The whole afternoon has been spent in the kitchen baking & listening to music.. Blissful! I split this mix to make a small loaf & some rolls (Purely because I have a small loaf tin & I wanted to use it! Also, this is all I own for when I move out.. 2 small loaf tins, a large loaf tin & a begonia.)
So here we go.. Bacon, Cheese & Onion Bread.

Ingredients:
- 3-6 rashers of bacon (Depending on how bacon-y you want it to be.. Alternately you can leave it out for a veggie version.)
- 1 medium red onion.
- 100g of cheese, chopped or grated. (I used ordinary cheddar but next time I might try blue cheese because I love it!)
- 750g bread flour.
- 2 teaspoons of salt.
- 25g of butter.
- 1 x 7g sachet of yeast.
- 450ml of water – made from one part boiling one part chilled.

Method:
i. Fry the bacon & onions together until crispy, then set aside on a piece of kitchen roll to cool down.
ii. Mix flour, salt, butter & yeast in a large bowl. Stir in the water gradually until you have a soft dough.
iii. Turn onto a floured surface & knead well for a good 10 mins 3. Shape the dough as required, put into loaf tin/make rolls & place on a baking tray, cover with cling film & leave to rise in a warm place until doubled in size. I left mine for slightly longer than I usually do & they seem to have risen better..
iv. Uncover & bake in an oven heated to 230c/450f/Gas 8 for about 30-35 mins or until done. The loaf should sound hollow when you tap the underneath.

.. Very good with cheese or soup! I don’t predict that this will stay around for too long.
