caramelised onion marmalade chutney.

I wanted to do something nice with the onions that I grew this year, so I thought a marmalade/preserve would be the way forwards. This is incredibly yummy, both in sandwiches & hot dishes or stock.. But rather painful to make! .. Next time I do it I will chop the onions in batches, chopping a kilo of onions in one go is a painful experience that I’d rather not repeat!

Onion Marmalade

Ingredients

- 1kg of Red Onions
- 4 cloves of garlic
- 70g butter
- a drizzle of olive oil
- 70g golden caster sugar
- half a bottle of wine
- 175ml red wine/balsamic/apple cider vinegar
- Seasoning: Add whatever suits your palete, e.g. chili, salt, pepper etc.

Method:

i. Melt the butter & oil together in a heavy bottomed saucepan.
ii. Add the onions & garlic.

iii. Add the sugar & seasoning & cook for a further 40-50 minutes.
iv. Add the vinegar & wine & simmer over a high heat for a further 30 mins.

Let the onions cool, pour into jars & seal.. (Put a scrap of baking paper between the jar lid & the onions to prevent rust forming.)

… I think I’ll make a few more jars of this as Christmas presents.
