pitta bread.

This morning has been the first opportunity I’ve had to bake in ages.. So I decided to do pitta bread. It’s been on my to-try list for ages & I’m away all of next week so these will be perfect to take as lunch!

Ingredients:

450g of plain flour (either white or wholemeal)
1tsp of sugar
1tsp of salt
14g of fast-action yeast. (two of the little sachets)
300ml of lukewarm water with a little drizzle of olive oil in it.

Mix together the flour, sugar, salt & yeast then mix with the water & oil to for a dough. Knead until smooth, & leave in a warm place for an hour – two hours to rise. Knead again and spilt into little balls. Leave these to rise again for a few minutes & preheat the oven to 200c/Gas 6/390f. Place on a lightly floured tray and bake for 8-10 mins.

Yum! (& yes, that is some of my rocket!)
