sweet potato curry.

Monday night’s supper!

Chicken & Sweet Potato Curry. Something put together quickly from fridge leftovers!

I used:

- an onion
- chicken & a chicken stock cube
- garlic
- broccoli
- peas
- sweet potato
- bombay mix & other spices to taste
- couscous.

.. But this will work with anything you have hanging around that needs using up!

Chop the onion, crush the garlic & fry together with the chicken until the meat is sealed. Add the sweet potato and the spices & stir to ensure the spice is well mixed. Add the chicken stock & some water, bring to the boil & leave to simmer for around 15-20 minutes.. Add the broccoli and the peas just before the end so as not to overcook them. Prepare the couscous, serve & enjoy!
