frittata.

I made frittata yesterday out of some leftover ingredients which were just hanging round the fridge. Easy to do & so yummy!

First peel the potato, cut it into small chunks & then boil it. While that’s cooking, fry red onion, bacon & leeks together in a frying pan & beat 4 eggs together in a measuring jug. (You can use any kind of leftover vegetable in this or leave it meat-free for a veggie version.)

When the potatoes are ready add them to the frying pan before pouring the egg mix over the top. Let the eggs mostly cook through & set before sprinkling the top with cheese & browning off underneath the grill.

Yum! .. & there’s even a little bit left over for today’s lunch.
